Does anyone have a dehydrator? I was doing a lot of research and it seems like they're all pretty much trash. The most recommended ones are the Excalibur (overpriced and underperforming) and Nesco models. The Nesco seems good on paper but I've read all kinds of problems from them just randomly dying one day to the fact that they expect you to stack the trays and run the dehydrator at 160F for a few hours so that they warp in order for them to fit (like what the actual F kind of nonsense is that?!) The trays tend to have a huge gap in the bottom that just lets the air out until this warping is done... Wirecutter recommends Nesco Gardenmaster or Samson Silent because the Samson has a 5 year warranty. Samson Silent is loaded with complaints about the thing failing and the 5 year warranty might as well not exist because the shipping costs to return the thing are about half the cost of it (and it's already $115+ depending on the model). I bought a nine tray Excalibur used off of amazon. It can raddle a bit if you don't put some weight on it or add some padding to the tray door interface, but I am happy with it. https://smile.amazon.com/gp/product/B008OV4FD0 They have it used and a newer model used. I am happy with the production rate and the nice smell of the dehydrating food. I have been drying fruits. I should try making jerky. I wouldn't call it loud, but it isn't silent by any means either.

I bet.

It wasn't until recently that I tried homemade jerky for the first time in probably 20 years and it definitely makes the standard Jack Links go cry in the corner.

So apparently this decision was made for me because female roommate is going to get her mom's old dehydrator. Just so happens to be an American Harvest model that's still working great after 20+ years. So excited to have dried fruit again!

See the price of those, even used, is just really hard to swallow for something that requires you to shuffle trays to have them dry evenly. The Nesco/American Harvest design puts the heat at the bottom and uses specially designed trays where the heat spreads out and up and then back down the center so everything is done evenly. It's a genius design, just unfortunately the materials they're using aren't as high quality as they used to be.

We have a cheap Presto Dehydro that we’ve been using for many years with no issues. We haven’t had any warping issues with the trays and it’s always been very reliable. We’ve dehydrated many a fruit and lots of beef and deer jerky over the years. Yes I was looking at that one too but Amazon was out of stock and I was trying to pay for it with my Amazon gift card balance since I got that $200 gift card for being approved for the Chase Amazon VS.

Calling all that have made beef jerky in a food dehydrator... @Saeren , @JNA1 , @DustinD and definitely anyone else! So I fired mine up tonight, first ever batch (about 2.25 pounds) is currently in there. I've searched online and find a million different answers to time/temp settings for a batch. I'm curious what anyone has tried and feels works best. Naturally lower temp means more time and higher temp means shorter time. Most all seem to recommend hitting a temp of 160 for at least a bit (maybe 30 min?) to ensure all bacteria is killed, where the rest of the process seems just focused on the goal of removing moisture. I set mine to 4 hours and 30 minutes at 158 degrees. I'll check on it at about 1am and see where it stands. I'm off from work tomorrow so I can stay up late to finish the batch if need be. If anyone has any tips or successes they can share when making beef jerky I'm all ears!

We haven't made jerky but I do know you have to get the temp up to 165F (because most of these dehydrators have some degree of temp variance and 160F is where it needs to get) or throw it in the oven after it's done or you risk serious illness. Apparently when it looks dry and leathery, that's a good sign that it's done. I like the way this article says to do it. https://bbqhost.com/how-to-tell-when-jerky-is-done/

My first batch turned out pretty good, better than expected I'd say. I'd give it a "B" rating when I wasn't expecting a near failure on my first attempt.

I'd say consistency wise it landed nearly perfect, maybe just a touch tough. It's the flavor that I think could use some work, which of course can be played with using different marinades/seasonings.

The batch ended up taking about 6 hours to complete. I was all over the place temp wise with the dehydrator. The bulk of it was done at 158 degrees (probably the first 3 hours) then I went a bit higher to 165 or so for about an hour, then backed it down to 131 degrees for the next 2 hours, checking on it every 30 minutes or so.

Next go-round I'll probably start with the highest temp out of the gate for an hour, maybe an hour and a half, then reduce it down to 131 and let it go low and slow from there. That way will probably take more like 8-9 hours overall, but the end product may be a notch better.

I vacuum sealed individual portions, all probably 2oz-3oz just going by experience and estimating. I would guess that the 2.3 pounds or so of beef that I started with probably ended at a little over a pound once complete. I had 7 or 8 pouches/servings in the end which was pretty good I thought.

It's definitely a process, so I wouldn't want to do it very often. Since the shelf life is 1-2 months on the finished product (probably 2 months vacuum sealed) I'd certainly suggest making a large enough batch to last that span of time to get the most bang for your time. Next time I'll probably go for 3-4 pounds of beef as a starting point. The 2.3 pounds that I did only took up 3 of the 6 racks that fit in the dehydrator, so I should be able to knock out nearly 5 pounds at once in theory.
